1.5 kg biryani rice

500 g ghee

250 g onions (thinly sliced)

1 piece of ginger

10 green chillies

Salt – as required

2 tablespoons vinegar

1 cup coconut milk
Spices

Cinnamon – 1 piece

Cloves – a few
-
2 cardamoms

Nutmeg – small quantity

5 teaspoons coriander powder

2 teaspoons chilli powder

1 teaspoon turmeric powder

Pepper powder – a little as required
Grind the spice ingredients together for better flavour.
Herbs and Garnishing

Coriander leaves – 25 g

Mint leaves – 25 g

Curry leaves – 25 g

Raisins – 20 g

Cashew nuts – 20 g

Fried onions – for garnish
Preparation Method
Step 1: Cook the Rice
Boil enough water in a large vessel.
Add:

Cinnamon

Salt
When the water starts boiling, add the biryani rice.
Cook until the rice is half done, then drain the water completely and keep the rice aside.
Step 2: Fry the Onions
Heat ghee in another pan and fry the sliced onions until golden brown.
Remove and keep them aside for garnishing.
Step 3: Prepare the Mutton Masala
In the same ghee:

Sauté well until aromatic

Cook the mutton well.

Sprinkle coriander leaves, mint leaves, and curry leaves over it.
Add half of the cooked rice on top.

Step 5: Dum Cooking
Cover the vessel tightly with a lid.
Seal the edges using maida dough to prevent steam from escaping.
