Made mainly with soaked lentils, onions, ginger, and spices, Parippuvada is simple to prepare and loved by people of all ages.

Let’s learn how to make crispy Kerala-style Parippuvada at home.

Ingredients

  • 1 cup Bengal gram (Chana dal) or Toor dal

  • 1 small piece of ginger

  • 3 dried red chillies

  • 12 small shallots

  • 1 sprig of curry leaves

  • Salt – as required

  • Oil – for deep frying

Preparation Method

Soak the Lentils

Wash the dal properly and soak it in water for about 2 hours. After soaking, drain the water completely.

Prepare the Ingredients

Finely chop:

  • Ginger

  • Dried red chillies

  • Shallots

  • Curry leaves

Grind the Dal

Add the soaked dal to a mixer grinder and grind it without adding water.

Make sure the mixture remains slightly coarse. Do not grind it into a smooth paste, as this helps achieve the perfect crispy texture.

 Mix the Ingredients

Transfer the ground dal mixture to a bowl.

Add:

  • Chopped ginger

  • Red chillies

  • Shallots

  • Curry leaves

  • Salt

Mix everything well.

Divide the mixture into 8 equal portions and shape them into small balls.

Flatten each ball gently using your hands to form vada shapes.

Tip: Dip your hands in water before shaping the vadas to prevent sticking.

Fry the Parippuvada

Heat enough oil in a frying pan.

When the oil becomes hot, reduce the flame to medium.

Carefully place the prepared vadas into the oil one by one.

Fry both sides until they become crispy and golden brown.

Remove them using a slotted spoon and place on tissue paper to absorb excess oil.

Serving Suggestion

Serve hot and crispy Parippuvada with:

  • Tea

  • Coffee

  • Coconut chutney

  • Tomato sauce
